One Pot Thai Chicken Curry

Russell Hobbs Pot Thai Chicken Curry


  • 4 Chick Thighs, boneless, skinless, diced
  • 1 Red Pepper, deseeded and diced
  • 1 Sweet Potato, peeled and diced
  • 1 Red Onion, diced
  • 1 Tablespoon Thai Red Curry paste
  • 1 Lime Leaf
  • 1 x 400g Tin Coconut Milk
  • 100ml Chicken Stock
  • Salt and Pepper to taste


  • Place all ingredients in the slow cooker bowl, mix and cook for 4-8hours
