Award-winning chef and owner of Lolo Dad's Cafe, Ariel Manuel, presents Cotton Candy - Coated Foie Gras on Melon -- fifth of five easy yet impressive starters he created for Calphalon®.

 

Cotton Candy

Coated Foie Gras on Watermelon

 

Ingredients

  • Duck liver, sliced 280g
  • Sugar 40g
  • Melon cubes for garnish
  • Pistachio nuts, roasted and chopped for garnish
  • Salt and Pepper for taste

 

Method:

1. In a frying pan, sear duck liver. Cut into desired portion.

2. Slide in a lollipop stick.

3. In a running cotton candy maker, coat the duck liver lollipop.

4. Sprinkle with roasted pistachio nuts.

5. Stick on a melon cube and serve.
