Chef Ariel Creates With Calphalon: (Recipe 1 of 5) Lightly Seared Tuna Loin

Award-winning chef and owner of Lolo Dad's Cafe, Ariel Manuel, presents Tuna in Mango and English Mustard Puree -- first of five easy yet impressive starters he created for Calphalon®.

 

Lightly Seared Tuna Loin

with Mango and English Mustard Puree

 

Ingredients

  • Tuna loin (whole slab) 320g
  • Ripe mangoes 2pcs
  • English mustard, diluted in water 5g
  • Sweet basil (a sprig)
  • Salt and pepper to taste
  • Olive oil for searing

 

Method:

1. Season Tuna with salt and pepper.

2. In a saute pan, heat olive oil.

3. Sear and cut into desired size. Skewer and place in glass filled with puree.

4. To make the puree: Combine mangoes, english mustard, sweet basil. Season with salt and pepper. Blend.
